The wine has a very briary almost dusty nose marked with blackberries, black cherries, raspberries, cassis, and anise seed. Ripe berries mingle with tobacco leaf, cedar, chocolate, vanilla, and a touch of violets. Integrated oak and firm, ripe tannins grip the palate and give way to a long chewy finish. Drink 2008-2012.
Di Stefano Winery wines were first introduced in the fall of 1993. The winery, Domaine Whittlesey Mark was established in 1984 as one of the first producers of premium Methode Champenoise wines in the Pacific Northwest. Consistent with the acclaim and reputation of the Whittlesey Mark sparkling wines, the DiStefano wines have received high marks for their quality and distinctive style. The winery's goal is to focus on Sauvignon Blanc, Merlot, Cabernet Franc, Syrah, and Cabernet Sauvignon exclusively in the still wine category while continuing to produce small quantities of premium sparkling wine. All new releases of sparkling wine and still wine will be bottled under the Di Stefano label.
