Don’t you just hate that? Here you are, trying to be moderate with your wine drinking, and, instead of rewarding your moderation, the gods of wine choose to smite said wine, making it undrinkable. What kind of justice is this?!
Actually, the answer to this question really relies on quite a few variables (I call them the 4 Rs):
- Is it Red wine (tannins preserve against oxidation)?
- Did you Re-cork it?
- Did you Refrigerate it?
- Did you Re-bottle it?*
*Note that I did not mention vacuum or inert gas treatments, as neither of these is better (in my humble opinion) than simply re-bottling into smaller bottles.
If none of these Rs apply, expect your wine to become fairly undrinkable rather quickly (a day or so). On the other hand, it’s not uncommon for wine to keep a week if the conditions are right.
